Ingredients

For the Dough:

  • 2 cups all-purpose flour

  • 4 tbsp oil or ghee

  • ½ tsp salt

  • ½ cup water (adjust as needed)

For the Filling:

  • 3 large potatoes (boiled & mashed)

  • ½ cup green peas (optional)

  • 1 small onion (finely chopped)

  • 2 green chilies (chopped)

  • 1 tsp cumin seeds

  • 1 tsp garam masala

  • 1 tsp coriander powder

  • ½ tsp turmeric powder

  • 1 tsp red chili powder (adjust to taste)

  • 1 tsp chaat masala

  • 1 tbsp lemon juice

  • 2 tbsp fresh coriander leaves (chopped)

  • Salt to taste

  • 2 tbsp oil for cooking the filling

For Frying:

  • Oil as needed for deep frying





Instructions

Step 1: Prepare the Dough

  1. In a large mixing bowl, add all-purpose flour, salt, and oil/ghee. Rub the oil into the flour until it has a crumbly texture.

  2. Gradually add water and knead into a firm, smooth dough. Cover with a damp cloth and let it rest for 30 minutes.

Step 2: Make the Filling

  1. Heat 2 tbsp oil in a pan, add cumin seeds, and let them crackle.

  2. Add chopped onions and sauté until golden brown.

  3. Stir in green chilies, peas (if using), and mashed potatoes.

  4. Add all the spices (garam masala, coriander powder, turmeric, chili powder, chaat masala, and salt). Mix well.

  5. Cook for 2-3 minutes, then add lemon juice and coriander leaves. Stir and let the mixture cool completely.

Step 3: Assemble the Samosas

  1. Divide the dough into small balls and roll each ball into a thin oval shape.

  2. Cut the oval in half, forming two semi-circles.

  3. Take one semi-circle and fold it into a cone, sealing the edges with a little water.

  4. Fill the cone with 1-2 tablespoons of the prepared potato filling.

  5. Seal the top by pressing the edges together firmly. Repeat for all samosas.

Step 4: Fry the Samosas

  1. Heat oil in a deep pan over medium heat.

  2. Fry samosas in batches until they turn golden brown and crispy.

  3. Remove and place on a paper towel to drain excess oil.




How to Serve Samosas?

Samosas are best enjoyed hot and crispy, served with:

  • Tamarind Chutney (sweet and tangy)
